Ingredients
2 cups self raising flour, sifted
2 large eggs, separated
2 cups milk
2 tsp sugar
50g butter, melted
Butter for cooking

Method
Make a well in the flour and whisk in the egg yolks, butter and milk until just combined into smooth batter.

Whisk the egg whites and gently fold in the batter.

Heat a large frying pan with a knob of butter. Pour the pancake batter onto the pan and cook over medium heat.
Flip the pancake over when bubbles appear on the top side of the pancake. Cook for another minute or so until the pancake is lightly golden on both sides.
Eat and enjoy!
