spagetti on my mind...

i have literally been thinking about spagetti allll day! its my absolute favourite and i could eat it all day every day...and almost do! gave mum a call and asked kindly if she felt like making me some for dinner :)

here is a cheeky tasty recipe for roasted capsicum spagetti with bread crumbs!

The bits:
• 4 red capsicums, remove seeds
• 4 yellow capsicums, remove seeds
• 4 garlic cloves
• 1/2 cup olive oil, plus extra to drizzle
• 1/2 bunch fresh thyme, just the leaves
• 4 slices of crunch bread like woodfired or sourdough
• 1/2 cup grated parmesan cheese and extra to serve
• 1/2 cup chopped flat-leaf parsley
• 500g spaghetti or your choice of pasta


Putting it together:
• Preheat your oven to 180°C.
• Thinly slice your garlic cloves and your capsicums. Place the capsicums, garlic, oil and thyme in a baking dish and cover with foil and roast for 1 hour. You can do this the day before if you need to.
• Place the bread in a food whiz and whiz until fine crumbs are formed. Sprinkle onto a baking tray and cook in the oven for about 10 minutes or until golden brown. Remove from the oven, set aside and leave to cool slightly, then mix with the parmesan and parsley.
• While your other things are in the oven etc cook the pasta in a large pot of boiling, salted water. Drain, return to the pot and add the breadcrumb mixture, the capsicums and their cooking juices and toss together.
• Season with salt and pepper to your taste and give it a drizzle with some extra olive oil and top with parmesan.
